Eggplant Yumminess

There is no other name to give this side dish we made tonight.

We picked these beauties out of our garden last night.




Then tonight we decided to make another side to go with our Mushroom medley.


4 eggplants sliced evenly
place them in large pan
drizzle with olive oil
Instead of soaking with olive oil we added a little water to the pan as well
Saute until they are just about done
Add your favorite Sauce. We used a local italian sauce.
Heat thoroughly

And Ta-Da! DELICIOUS!
